Appalachian Cornbread

Ingredients: (Appalachian Cornbread)

1 cup flour

1 cup white cornmeal

2 tablespoons sugar

4 teaspoons baking powder

1 teaspoon salt

1 cup milk

1/4 cup vegetable sh

1 large egg — beaten

Directions: (Appalachian Cornbread)

Preheat oven to 425 degrees. Put about 1 teaspoon shortening in an 8×8 pan, and put it into the oven to melt and heat. Ina medium bowl, combine flour, cornmeal, sugar, baking powder and salt. Stir in remaining ingredients. The batter will be lumpy. Pour into the hot, prepared pan. Bake for 18-22 minutes or until done in center. Immediately remove from pan.
