Ingredients:(Roast Leg of Lamb)
1 (7- to 10-pound) bone-in leg of lamb
4 clove(s) garlic, sliced very thin
5 sprig(s) rosemary, cut in 1/2-inch sticks
Salt and pepper
1/2 cup(s) extra-virgin olive oil
Directions:(Roast Leg of Lamb)
- Preheat oven to 450 degrees F.
- Cut slits in lamb two to three inches apart all over lamb and insert one slice of garlic and one piece of rosemary into each cut. Rub the entire leg with lots of salt and pepper and coat the leg with the olive oil.
- Place leg of lamb on a rack on a sheet pan and roast for 15 minutes. Remove leg from oven and lower the heat in the oven to 275 degrees F. Once oven temperature is down, put the lamb back in the oven and cook for 1 to 1 1/2 hours for medium. Internal temperature should be 145 degrees F.
