Ingredients:(Fresh Salad with Garlic and Yogurt Dressing)
1 bag tender arugula
6 radishes, sliced in half
5 scallions, cut into 2-inch pieces
3 kirby cucumbers (or another small, crunchy variety)
10 grape tomatoes, halved
2 celery sticks, cut into long strips
1 yellow bell pepper, cut into long strips
For the Dressing:
3 garlic cloves, crushed
4 Tbsp lemon juice
Directions:(Fresh Salad with Garlic and Yogurt Dressing)
- n a large salad bowl, toss the cut vegetables together.
- For the dressing, combine the garlic, yogurt, olive oil and lemon juice together in a separate bowl.
- Season dressing with salt and pepper to taste.
- Pour the desired amount of dressing over salad and mix to coat vegetables.
